We are finishing packing up our house and are getting ready to close on April 3rd, which is just 2 weeks away! That, combined with the fact that my computer memory is full and I cannot upload any pictures right now, mean that I haven't done a lot of posting lately. Sorry about that!
But, I plan to be back in action in a few weeks - and I have some great new ideas about the direction I want to take this blog - so definitely stay tuned! I will be back, and hopefully it will be worth the wait! :)

Meal Plan Monday
I'm officially joining Menu Plan Monday at orgjunkie.com.
So, last week I didn't post a meal plan because I didn't really have one. With my sister-in-law in town I didn't know what days we would be eating dinner at my in-laws house, and which days we would be at home. I had left over meals from the week before, so I figured I would just use them as needed.
The next couple weeks are going to be pretty crazy for us as we pack and move out of our house. We are planning to be all moved out by the last weekend in March. So, I want to make easy meals that don't take a lot of prep or time cooking - unless it's in the crockpot - and I need to use up a lot of the food that I have in my stockpile and freezer.
Monday - dinner at the in-laws
Tuesday - Chili - want to have this one more time before spring is here for good!
Wednesday - Layered Enchilada Bake (from 2 weeks ago)
Thursday - Pasta E Fagoli Soup in crockpot
Friday - Leftovers
Saturday - Tacos (taco meat and beans in freezer)
Sunday - Pulled Pork BBQ sandwiches in crockpot (pork from freezer)

So Cute!
A friend of mine on Facebook posted a link to this site, Twinkle and Shine. I checked it out and think that these shirts are so cute!! I can't wait to get one for K and for the new babe! I have never seen shirts like this before, and think they are such a great idea! Plus, this family is just beginning the process of adopting from Ethiopia, and because we have good friends that recently adopted from Ethiopia I like hearing about other's adoption stories. Just thought I'd pass it along so you can find cute shirts for your kids too!
